With the introduction of Silpat Entremet, a new casserole-style silicone baking pan, Sasa Demarle Inc. has entered the bakepan category. Designed with Silpat silicone that is reinforced with a special fiberglass mesh, the Entremet provides maximum heat transfer, even browning, and good release properties, according to the company. The Silpat Entremet, inspired by the French word, which refers to a French tradition of serving a cake between courses, is designed for preparing a variety of sweet and savory dishes. Measuring 10 x 13.75 x 1 inch, the Silpat Entremet is microwave, oven and freezer safe, and is effective at temperatures from -40°F to 480°F , the company said. The Entremet should be placed on a baking sheet or rack for safe and easy transport. Recipes for Gourmet Brownies and Macaroni and Cheese are included on the packaging. All Silpat products conform to FDA regulations and are NSF- and Kosher-certified. The Silpat Entremet will be available for shipment December 2012, with a suggested retail price of $55.
