Ary Inc., is coming to the International Home + Housewares Show here this week with a beefed up assortment of gourmet-style vacuum sealers. The company’s newest model is its VP120, a chamber-style machine specifically designed for regular usage and sous vide cooking. When sealing with a chamber machine, the vacuum pouch is placed inside the chamber and the lid is closed. Air is sucked out of the entire chamber, not just the pouch itself. This allows air pressure on both the inside and outside of the pouch to remain equal and liquids to stay inside the pouch. Ary’s new VP120 has a heavy-duty stainless steel body creating a durable machine for any bistro, restaurant or even home kitchens. Its double seal bar creates a strong seal ensuring that nothing escapes the bag and air or water from the sous vide bath does not penetrate.
