Coravin, a manufacturer of wine access systems, is partnering with American steakhouse chain Smith & Wollensky to create a new wine menu. The partnership will allow all eight U.S. Smith & Wollensky steakhouses to create an ultra-premium by the glass wine experience, the company said.
The partnership is said to give Smith & Wollensky customers a unique dining experience with a new way to serve wine tableside. Diners can now pair wines from the ultra-premium by the glass menu with their USDA prime hand cut steaks, the company said.
Wine selections on the Coravin by the glass list include: 1996 Marcarini “Pertinace” Barbaresco, 2004 BV “George de Latour” Cabernet Sauvignon, 2005 Palmaz Winery Cabernet Sauvignon, 2007 Antinori “Guado al Tasso” Super Tuscan, 2010 Cardinale Meritage and 2013 Caymus Cabernet Sauvignon.

The Coravin system is said to allow sommeliers to pour wine without removing the cork, safeguarding the remaining wine from oxidation and allowing restaurants to offer premium wines by the glass without the risk and cost of spoilage.
