Williams Sonoma is exclusively launching the Thomas Keller Signature Collection by Cangshan Cutlery to its stores nationwide. The collection launched online last month.
Designed by Michelin-starred chef Thomas Keller and crafted by Cangshan, each of the 20 knives in the collection are forged from Swedish Damasteel RWL34 powdered steel, a fine-grained, high-alloy steel known for its excellent edge strength, hardness and corrosion resistance. The collection is packaged in walnut storage boxes featuring Keller’s signature.
“The Thomas Keller Signature Collection by Cangshan continues in the tradition of Williams Sonoma’s exclusive partnership with Chef Keller that has always provided our customers with best-in-class products from cookware to food,” said Ryan Ross, president of Williams Sonoma.
To coincide with the launch of the cutlery collection Williams Sonoma said it will debut a five-part online video series that features Chef Keller demonstrating some of his favorite knife skills. The “How To” video series will demonstrate techniques that include: Honing a Knife; How to Brunoise a Carrot; Breaking Down a Whole Chicken; How to Tournée a Potato; and Carving a Roasted Chicken.

The Thomas Keller Signature Cutlery Collection by Cangshan includes a 7-piece knife block set; 17-piece knife block set; 7-Piece magnetic knife set; 5-piece knife block set and 3-piece TAI knife block set.
In addition the knives are available in open stock including a 10-inch Chef’s knife; 8-inch Chef’s knife; 8-inch bread knife; 6-inch boning knife; 8-inch honing steel; 5-inch serrated utility knife; 10.5-inch carving knife; 7-inch Santoku knife; Set of four steak knives; 2.75-inch peeling knife; 5-inch fine edge steak knife; 7-inch utility knife; 3.5-inch paring knife; carving knife set; and 5-inch fine edge utility knife.
